I agree that people should be realistic. Some of the big magazines and papers are inpenetrable for people starting out because much depends on rapport and relationships with editors. In fact that is the key at any stage. An aspiring writer must build relationships with editors.
And yes proofreading is very important. I heard a story about a woman who missed out on a job because she misspelt the name of the paper on her letter.

good tips, particularly the proofread, proofread, proofread!! Mistakes won't kill all chance of acceptance but they sure make you look like someone who doesn't care.

I forgot to mention that when I make that oat bread, I prefer to cut it into rolls. They do freeze well, but one shouldn't keep them in an airtight container ; being so moist they tend to go mouldy
