It could be that your grandmother is experiencing some dementia symptoms. Even if some of the behaviour is typical to her personality, as she ages it might be aggravated by this.
It's not uncommon for people her age to distrust banks, she lived with parents who survived the depression. Many older people are fearful and behave aggressively out of fear, whether it's a conscious fear or not. Their ability to make rational decisions starts to decrease too. Taking large amounts of money out of the bank could be because she is afraid she won't have any when she needs it.
A sympathetic ear to listen to her, a huge dose of patience and an attitude of "what does it hurt" will help you and your family cope.
