I think I'll have to get some
books on canning. It sounds like such a great idea. My mom used to make jams and jellies, but I don't remember what she did. Corned-beef and venson? I've never heard of that before. Thanks and have a great evening

The main thing you have to know is which vegs are high acid and which are low acid. Tomatoes and saurkraut are high, potatos and green beans low. High acid can be water bath (low temp, long time) low acid, (pressure canned, short time.) These are rule of thumb instructions, check the "blue book" canning guide for specifics. I can
wonderful corned beef made with venison that would make you sneer (spit) at what you can buy in the super-market. If you would
really like the recipe for making it, I could mail you a copy. It's cheap and easy to do. Guy
