darling it's so good to come on back to blogit and read your post.
No I do stuffed tomatoes baked in the oven but not just using the skin. I scoop out the inside and mix cheese and breadcrumbs and herbs and replace it all into the skin and bake. But hey why am I taking you serios?

I was doing just fine until I got to thinking about sweet potatoes
with butter and a bit of salt & pepper. Now I'm going to see that image all day. You know when that kind of craving hits, nothing else can satisfy the appetite. I hope I don't catch a cold from going out in the rain to pick up some sweet potatoes... :)

The things you come up with are just soooo unbelievable and extremely funny. Lucky me, I don't like tomatoes, so all coli-problems in that respect are avoided.

I love sweet potato. I love it mashed or roasted or as a pie topping. I'm also a bit of a tomato fan except many are now low on taste (sun dried tomato on toast is appealing).

I have not seen tomato skins as something to eat with a dip but in spanish cuisine we use tomato skins ( and some of the inside as well) together with onion , garlic and green pepper , all cut up small , with salt and pepper added,  to sautee and make what we call a "sofrito" which is kind of a seasoning sauce that we ad to almost everything we cook, steaks, soups, stews, you name it, the sofrito adds that spanish flavor.  We also stuff the skins of the hollowed tomatoes with all kinds of stuff ,  Maybe some cheese, spinach and of course some sofrito :-), or perhaps ground beef, a little tomato paste and ...you guessed it, sofrito.  and after they are all stuffed we bake them for about 30 minutes... they come out delicious.  Great post :-) I am hungry now loll

Whacky, now you've got me thinking about those two eggplants in my fridge, one white and one deep purple and That I need to roast them.  I think I'll go get them going before they rot in the veggie bin of the fridge.  I'll decide later how to serve them.

I like to eat the tater, and sweet tater skins!  Yumm! 

Tell Bo, Davy says Arf! and both his ears are now at attention--except when one goes inside out... silly fashion, I think!
