Sounds like my Mom's potato salad, except for the olives. No olives, instead we had chunks of browned bacon in it at times...But Carrots? Yecchhh...

No carrots in my potato salad and no eggs--dollop of mayo instead of the eggs. I like chopped celery in mine and a bit of diced jalapeno peppers too.

Carrots in potato salad? That's just wrong.
I used to make kosher potato salad for a deli in Salem, OR - it was a summer job between my junior and senior year. I don't know what made it kosher, it was just like Mom's, and there were no carrots. Potato, celery, onion, egg, mayo with a dab of mustard, a little paprika on top for color. Simple. Geez! I'm gonna go put the potatoes on. Look what you did.

Your potato salad sounds delicious! I can see where the carrots wouldn't be bad, but... well just not right. Guess they needed to use up those carrots!

I wouldn't mind them if they are cut small and flat enough.
I like to add a bit of dill. A bit of curry isn't bad, either.
