What about baby carrots? Are they as good for you as the big ones? I usually just eat those, both raw and cooked, without cutting them at all.

And it does make sense! Actually, I prefer to eat carrots raw, as a salad, coarsely grated, with freshly squeezed lemon and a bit of salt and
mirin (Japanese cooking wine)...

You shouldn't cook carrots at all. Raw they are much healthier and another thing: you shouldn't peel them either. All the benefits and vitamins are directly under or in the skin and would get peeled away. I'm sure you knew this.
