Break down all your projects into physical actions (phone calls, writing letters, computer stuff, etc.) then do all of the same actions together.

Find a way to focus your thoughts and bring them back when they lead you away from a task at hand. You are correct about too much learning. Eventually and over time the pieces of information that you learn will fit together as a completed puzzle. If you think about it, learning is cumulative. After a certain time, it is necessary to perfect one area. If one continues to try everything, mastery will not occur.
Try completing some things one at a time completely, Eventually you will see that it will change and improve aspects of your life.
