i do like polenta so am thinking Grits would be great...putting that aside, anything you cooked would be delicious and a real treat. watch for the broom in the morning.

Yes just add the feta cheese directly on the grits, then the spinach, then the cheddar and bacon. It will not take as long to cook and you will need to put the foil on from the first I guess and take it off in the last 10 or so minutes to be sure the bacon crisps and the cheese melts. Let me know how you like it. We love it and it is good served with only sliced tomatoes and cucumbers. I hope you enjoy it.

Sounds great! I love spinach with different cheeses anyway, though I've never actually made grits - gotta try them...I guess this would also work if you just served the spinach on top of the grits without actually making a kind of pie - I'm always for cutting down on the work involved, LOL...
