I am so glad you put this up. I knew how they were created, but didn't know the complementary flavors and I just volunteered to take carrots to my mom's assisted living Christmas dinner next week. I had seen a roasted carrot dish on a tv show sometime back that looked really good but had been thinking I'd like to try some kind of different flavor on it...this gives me some ideas to think about.

WOW!!! Look at all the stuff I learned! I too like Baby Carrots, but I always thought, well, of course they are Baby Carrots - what else would they be when they're born? And when they grow up they are big Adult Carrots. But then these poor babies never make it into adulthood, and I always felt a teeny, weeny bit sorry for them...But I eat them anyway...
