You do have to be careful if you are boderline diabetic.  Much of the cuisine of Southeast Asian has sugar.  Always ask if it does.  And yes, tehre is a lot of white rice.  I would stay away from the canned meats and fish if I were you.  To much salt.  Go for the fresh stuff!  Sounds like you are having a good time!  Cheers.

Here in Singapore at the moment, I am eager to try some of the street food,

as long as the hygiene issue is not a red flag.  We go to the grocery store, too, and get kinds of fish and fruits and canned goods I have never seen before.  I opened a can of 'stewed pork' today, and found it was two thirds hunks of pure fat.  What meat there was, was sufficiently tasty, though!

Do you have a favorite fish to recommend?  We tried toman and parrotfish, but neither were especially outstandingly different from something like tillapia.

Being diabetic (borderline numbers, now) there are some things I can't get away with, but have to eat plenty of 'good' foods to get away with a little craziness like 'yam-onna-stick' or eating at the sushi-train, where the items proceed past the table on a conveyor, and you just take what looks interesting.  Too much white rice, though, really puts up the blood sugar!

When I travel I, too, like to savour the local food and even try out the street vendors.  You describe it so well that as I sit here I wish I could taste a golgappa!  Yummmm

so true.  When I travel in Southeast Asia I eat a lot of street food. Asa matter of fact, most of their restaurants are like food ocurts, with agreat deal of variety, smells and tastes.  And cheap!

What 8th wonder?   The tailoring shops have gone very up market (as has Khan Market).  But, they can copy clothes fairly well and give good service. I don't know about the same evening.  They are all very busy these days.  There is a shortage of workers who have begun to work for designers and the garment industry - for internal use and exports.

so true.  I have happy memories of golgappa wallas in Kolkata when I lived and worked there in the late 60s.  Not to mention 'jhal moordi'.

My brother had to work in India last week and so he took our  mother along. I'm looking forward to hearing about what they ate.  I love Indian food. Yes, I think if you follow your "gut" instincts with street food one is fine.

This sounds so wonderful. I would like to try my hand at these. They sound wonderful. I am a foods nut. Some of the things you write about just make me want to run right to the kitchen and try it. Thank you so much for sharing it.
